Vegan Choco chip Cookies:


1 cup (120 grams) all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

3/4 cup (170 grams) vegan butter, at room temperature

3/4 cup (150 grams) sugar

1 teaspoon vanilla extract

1 flax egg (1 tablespoon (7 grams) ground flaxseed + 2 tablespoons water)

1 cup (180 grams) vegan chocolate chips


Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large bowl, cream together the vegan butter, sugar, and vanilla extract until light and fluffy. Add the flax egg and mix until well combined.

Add the dry ingredients to the wet ingredients and mix until everything is well combined. Stir in the chocolate chips.

Drop dough by rounded tablespoons onto the prepared baking sheet. Bake for 10-12 minutes, or until the cookies are lightly golden brown and set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

1/4 cup (43 grams) unsweetened cocoa powder

1 teaspoon vanilla extract

1/8 teaspoon salt

1 cup (180 grams) vegan chocolate chips


Add all of the ingredients, except for the chocolate chips, to a blender and blend until smooth.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

Add the chocolate chips in during the last few minutes of churning.

Serve immediately or store in a freezer-safe container for later.

1 cup (150 grams) raw almonds

4 cups (960 ml) water

1 teaspoon vanilla extract (optional)

Soak the almonds overnight in a bowl of water.

Drain and rinse the almonds and add them to a blender with the water, vanilla extract, and sweetener (if using).

Blend on high until the almonds are completely pulverized and the milk is smooth.

Place a fine mesh strainer over a bowl and pour the milk through.

Store the milk in a jar or container with a tight fitting lid and refrigerate for up to 1 week.

Preheat oven to 350 degrees F (180 degrees C). Grease and flour two 9×13 inch baking pans.

Sift together the flour, sugar, cocoa, baking soda, baking powder, and salt. Add the oil and vinegar and mix until well blended. Add the vanilla and water and mix well again. Pour batter into prepared pans.

Bake at 350 degrees F (180 degrees C) for 30 minutes. Cool cake before serving.
