Ingredients:

– 225g Butter

– 225g Caster Sugar

– 4 Eggs

– 225g Self Raising Flour

Instructions:

1. Preheat your oven to 180°C/350°F/Gas Mark 4 and grease a 2lb loaf tin.

2. Cream the butter and the sugar together until light and fluffy.

3. Beat in each egg one at a time, then stir in the vanilla extract and grated lemon zest if using.

4. Sift in the flour gradually and fold into the mixture with a metal spoon until evenly combined.

5. Spoon the mixture into the prepared tin and level out the top.

6. Bake for 45-50 minutes or until a skewer inserted in the middle comes out clean.

7. Leave to cool in the tin for 5 minutes before turning onto a wire rack to cool completely.
