chocolate 60%

cocoa butter 40%

Instructions:

1. Measure out the ingredients: 60% chocolate to 40% cocoa butter.

2. Melt both ingredients together in the microwave.

3. Give the mixture a little stir halfway through to mix the ingredients well together.

4. Place the mixture back into the microwave.

5. Stir the mixture until it is smooth and homogeneous.

6. Use as desired!

You can color this as per the theme of the cake. Use a velvet spray gun to apply this mousse. You can also use a piping bag to pipe the mousse out of it.
