Grandma s Christmas Goodies:A Festive Fun

It was the night before Christmas and the Baker family were busy preparing for the holiday. Grandma was in the kitchen, stirring a big bowl of cookie dough with her wooden spoon while children frolicked around her, shouting with glee. With the help of her grandkids, she divided the cookie dough into three different bowls, adding red food coloring to one bowl, yellow food coloring to another bowl and blue food coloring to the last bowl. Once kneaded with each color, they grabbed small pieces from each bowl and created colorful cookie-dough balls that were flattened onto parchment paper-lined baking sheets two inches apart from each other.

At 5pm sharp everyone gathered near the oven and watched as Grandma set her timer for ten minutes. As their anticipation rose, an aroma of buttery sweetness began to waft through the air, and when it was time for them to open the oven door, out came a tray full of rainbow cookies! The kids erupted in excitement at their creations; even grandma couldn’t contain her delight!

Christmas had come early in their home that year without fail thanks to Grandma’s creative cooking. Now you too can create these delightful rainbow cookies with this simple recipe:

Ingredients:

-3/4 cup butter softened

-1 cup granulated sugar

-1 large egg yolk

-2 teaspoons vanilla extract

-1/2 teaspoon almond extract

-1 pinch salt

-2 cups all-purpose flour

-1 teaspoon baking soda

-1 teaspoon baking powder

-Red food coloring

-Yellow food coloring

-Blue food coloring

Instructions:

Preheat oven to 350 F (180 C). Cream together softened butter and sugar until light and fluffy before adding egg yolk, vanilla extract, almond extract, salt. Slowly incorporate dry ingredients such as flour, baking soda, baking powder then divide evenly into three different bowls. Knead red food dye in one bowl until fully combined; repeat with yellow dye and blue dye respectively. Take small pieces from each bowl to form cookie balls then flatten slightly on parchment paper lined baking sheet about two inches apart from each other. Bake for 10 minutes or until golden brown around the edges allowing plenty of time for cooling before serving. Enjoy your colorful rainbow cookies!

-2 cups all purpose flour

-1 teaspoon baking powder

-1/4 teaspoon salt

-3/4 cup butter, softened

-1 1/2 cups granulated sugar

-3 eggs

-1 teaspoon vanilla extract

-3/4 cup milk

-1/4 cup rum

Fruits:

-1 cup dried cherries

-1 cup dried cranberries

-1/2 cup golden raisins

-3/4 cup chopped walnuts

Instructions:

Preheat oven to 350 F (180 C). Grease and line a 9×13 inch pan with parchment paper. In a medium bowl, whisk together flour, baking powder and salt. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Slowly incorporate both dry and wet ingredients in batches, alternating between the two until fully mixed. Lastly fold in rum,fruits and mix until just combined before pouring batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean then allow to cool completely before serving. Enjoy!

Ingredients:

-2 cups all purpose flour

-1 teaspoon baking powder

-1/4 teaspoon salt

-3/4 cup butter, softened

Slowly incorporate both dry and wet ingredients in batches, alternating between the two until fully mixed. Pour batter evenly into prepared pans then bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before assembling with frosting and/or decorations of your choice. Ingredients:

-1 pie crust (homemade or store-bought)

-3/4 cup packed light brown sugar

-2 tablespoons all purpose flour

-1 teaspoon ground cinnamon

-1/4 teaspoon ground nutmeg

-Pinch of salt

-2 large eggs, lightly beaten

-1 can (15 oz) pure pumpkin puree

-1 can (12 oz) evaporated milk

Instructions:

Preheat oven to 350 F (180 C). Roll out the dough onto a lightly floured surface then transfer to 9 inch pie pan gently pressing into place. Trim and crimp the edges as desired before prebaking for 10 minutes then set aside. In a large bowl, whisk together brown sugar, flour, cinnamon, nutmeg and salt until fully combined before stirring in eggs until well blended. Gradually add in pumpkin puree and evaporated milk then pour into prepared crust. Bake for 40-45 minutes or until knife inserted comes out clean allowing plenty of time to cool before serving. Tarts:

Ingredients:

-1 pie crust (homemade or store-bought)

-3/4 cup packed light brown sugar

-2 tablespoons all purpose flour

-1 teaspoon ground cinnamon

-1/4 teaspoon ground nutmeg

-Pinch of salt

-2 large eggs, lightly beaten

-1 can (15 oz) pure pumpkin puree

Instructions:

Preheat oven to 350 F (180 C). Roll out the dough onto a lightly floured surface then use a round cookie cutter to cut out circles for tart shells. Gently press circles into mini muffin tin and trim any excess. Prick the bottoms with a fork before baking for 10 minutes. In a large bowl, whisk together brown sugar, flour, cinnamon, nutmeg and salt until fully combined before stirring in eggs until well blended. Gradually add in pumpkin puree then fill prepared tart shells with equal amounts of filling. Bake for 20-25 minutes or until knife inserted comes out clean allowing plenty of time to cool before serving. Enjoy your festive tarts!

Cheesecake:

Ingredients:

-1 1/2 cups graham cracker crumbs

-3 tablespoons granulated sugar

-6 tablespoons melted butter

-4 (8 oz) packages cream cheese, softened

-1 cup granulated sugar

-4 large eggs

Instructions:

Preheat oven to 350 F (180 C). Grease and line a 9 inch springform pan with parchment paper. In a medium bowl, combine graham cracker crumbs, sugar and melted butter before pressing into the bottom of prepared pan. Place in preheated oven and bake for 10 minutes then allow to cool completely. In a large bowl, cream together cream cheese and sugar until light and fluffy. Beat in eggs one at a time making sure each is fully incorporated before pouring into prepared crust. Bake for 40-45 minutes or until knife inserted comes out clean then allow to cool completely before serving. Enjoy!

Ingredients:

-6 tablespoons melted butter

In a medium bowl, combine graham cracker crumbs, sugar and melted butter before pressing into the bottom of prepared pan. Place in preheated oven and bake for 10 minutes then allow to cool completely. In a large bowl, cream together cream cheese and sugar until light and fluffy. Beat in eggs one at a time making sure each is fully incorporated before pouring over cooled base.
